Time to Break out Some Delicious Ribs and Rice

Baby back ribs

Ingredients & Shopping List:

Ingredients For the Spice Rub for ribs

  • 3 tablespoons sugar
  • 2 teaspoons salt
  • 1½ tablespoons smoked paprika
  • 1½ teaspoons garlic powder
  • 1½ teaspoons onion powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • ½ teaspoon ground mustard
  • ½ teaspoon cayenne pepper
  • 2 racks baby back ribs
  • 1 lb package of white rice
  • 18oz bottle of Sweet Baby Rays BBQ sauce


Instructions for cooking 2 racks of baby back ribs

Place the spice-coated ribs on a foil-lined baking sheet, cover tightly with more foil, and bake in a 300°F-oven until tender, about 2 hours. Pour off rib juice and save in a large saucepan. To finish the ribs, brush them with BBQ sauce and finish the ribs directly on the grill for 10 to 15 minutes, brushing occasionally with the BBQ sauce until charred in spots and heated through.
Rib Rice
Take rib juice you saved in large saucepan and add an equal amount of water.
Add 1 part rice to 2 parts water/rib juice.
Bring the water to a boil.
Maintain a simmer. Reduce heat to low, cover the pot with a tight fitting lid, and maintain a gentle simmer.
Cook without peeking or stirring. Cook until the water is absorbed, about 18 minutes. Try not to peek until the end of the cooking time so the steam doesn't escape. Whatever you do, don't mix the rice while it's cooking — this will lead to gummy rice.
Let the rice rest covered. Turn off the heat and let the rice sit, covered, for 10 minutes. During this time, the rice will steam for extra fluffy results.
